Recap: I slept really well last night! I could have kept sleeping if it weren’t a work day! It’s Cinco de Mayo and I really wanted some tacos!!! I made a pretty acceptable version of a taco salad for lunch. It was just romaine, tomato, cucumber, avocado, and about a quarter cup of black beans and corn. Recap: Woohoo! More than halfway there! The last 12 days have felt like the longest in my life! Not necessarily in a bad way, but it’s definitely passing by slowly. Today was a cloudy day here and all I wanted was some warm, comfort food. I think I’ve been craving warm stuff because my body temp is a little lower than normal and it’s also freezing in my office. Mid day salads are perfect for a hot day, but it’s a little cool today. So, I opted for the quinoa lentil pilaf AGAIN! I love it, but I think I’m getting sick of it.
I’ve been having some cravings for things that aren’t on the plan, but are definitely healthy foods. Not junk food cravings. I can walk past a candy dish without a second glance but I’d kill for some 21 Day Fix cheesecake!!! Or a flatbread pizza… I’m dedicated to finishing the full 21 days without falling off track, but I’m really looking forward to adding some foods back in. I’m definitely itching for the finish line!!
Breakfast: Fruit plate with pear, strawberries, raspberries, and blackberries.
Lunch: Quinoa lentil pilaf.
Snack: Shakeology pudding.
Dinner: Baked sweet potato with sauteed peppers and onions.
Daily Supplements: Mineralize, Optimize, Detox, Power Greens, Soothe.
Recap: Okay, I’m starting to get a little sick of the salads now. I’m surprised it took this long honestly. I really just want some warm, comforting food. Makes 1 serving!
- 1 1/2 tsp. extra virgin olive oil
- 1/2 medium carrot, diced
- 1/2 medium stalk celery, diced
- 1/4 medium onion, diced
- 1/4 medium red bell pepper, diced
- 1/4 tsp ground smoked paprika
- 1 dash group cumin
- 1/4 tsp. ground turmeric
- 3/4 cup cooked quinoa
- 1/4 cup cooked lentils
- 1 1/2 tsp. grated lemon peel
- 1 1/2 tsp. fresh lemon juice
- 2 tbsp finely chopped parsley
Heat oil in medium saucepan over medium-high heat. Add carrot, celery, onion, bell pepper, paprika, cumin, and turmeric; cook, stirring frequently for 5 minutes or until tender. Add quinoa, lentils, lemon peel, lemon juice, and parsley to cooked vegetables; heat over medium heat for 2 to 3 minutes, or until heated through. Fluff with fork and serve.
Note: I passed on the turmeric and red peppers, but I added chili powder instead. I also omitted the lemon peel.
Recap: Today has been such a great day! I am so doggone proud of myself. I resisted homemade cinnamon rolls this morning. Seriously… it was unreal. Recap: It felt really good to get back on track after missing supplements and meals yesterday. It was also my first full day on the detox supplement. Not as bad as I was expecting!! It reminds me of the fiber drink that comes with the 3 Day Refresh, but it doesn’t get thick like that. Food today was great! Week 1 is DONE!! Which means that I am now eating a fully vegan diet! Crazy! It’s waaaay less complicated than I thought it would be. I used to be a vegetarian but never went vegan because I thought there was just way too much to it. I do miss certain things, but not as much as I thought I would. Recap: I don’t think I even rolled over last night! I slept great!! I woke up before my alarm and felt wide awake. My fruit was super yummy this morning. I think I should have had a little more because I started feeling some mild hunger pangs around 11ish. But, I drank more water and it subsided.
