Butternut Squash Fries

I had a really strong craving for some sweet potato fries, but I didn’t want to use one of my yellow containers. I had this butternut squash laying around and I knew I had to use it before it went bad. So…. Butternut squash fries were on the menu! They’re a little bit sweet, a little salty, and a little spicy. They definitely satisfied the craving!

Butternut Squash Fries – 21 Day Fix Approved!!

 

Ingredients:

1 small butternut squash, peeled and seeds removed
1 tbsp. olive oil
1/4 tsp. pink Himalayan salt
1/4 tsp. garlic powder
1/4 tsp. dried basil
1/4 tsp. black pepper
1/8 tsp. cayenne powder
Dash of cinnamon

Directions:

  • Preheat oven to 450F. Line baking sheet with silicone liner or aluminum foil.
  • Cut squash into evenly sized fries. The smaller they are, the quicker they will cook.
  • Place the fries into a bowl with the olive oil. Toss until all the fries are coated. Season with remaining ingredients and mix until combined.
  • Place fries on tray and evenly spread out so no pieces overlap. Place into oven and bake for 20 minutes. Flip, and continue baking for another 10-20 minutes, or until desired crispiness is reached. I like them to be a little bit charred on the ends.

Note: If you want crispier fries, place them on a metal rack for cooking!

Results: 21 Day Bikini Bootcamp

We just finished a GREAT round of 21 Day Fix in my 21 Day Bikini Bootcamp challenge group! We have 10 amazing challengers who have been working hard! I am so proud of these ladies!!

Challenger Results:

This is my favorite part!! I do enjoy when I see results on my own body, but it’s even more rewarding when my challengers see them on theirs! These ladies have pushed themselves so hard and I couldn’t be more excited to have them on my team! I haven’t heard from everyone just yet, but here is what I have so far:

Weight lost: 25 pounds total – Wait, whaaaaat??? Yes!!! TWENTY FIVE friggin pounds!
Inches lost: 10 inches total!
General improvements: Clothes are fitting looser, friends and family members are starting to notice positive changes, and overall confidence is boosted!

My personal results:

Weight lost: 4 pounds!!! Buh-bye!
Inches lost: 3 total, 2 on my waist and 1 on hips. Yesss!!!!

Day 19, 20 & 21: 21 Day Bikini Bootcamp

The last few days of this round of 21 Day Fix are on the books! I didn’t finish quite as strong as I wanted on Sunday, but I still did pretty okay.

Friday was a great day and I really felt strong during my cardio workout! It is one of my least favorites, but I always feel great about myself after I finish it! I am noticing improvements in the quality and quantity of the exercises I can do. Saturday was a rainy day, so I got my workout out of the way first thing and then spent the rest of the day organizing my “junk” room and getting rid of somethings. I also did some cleaning and spent most of the day on my feet. Sunday was a nice, lazy morning that included sleeping in, Yoga, and making breakfast. We went out in the Jeep Sunday afternoon and I spent the majority of the afternoon climbing hills and walking around snapping pics of everyone. It was a pretty active weekend! But, after all that time outside and walking around, the LAST thing I wanted to do was cook. So, we stopped at Arby’s for dinner. I don’t even feel bad about it! I have been working so hard the last three weeks that I allowed myself to slip. But, I’m right back at it tomorrow! No excuses!

Friday’s meal plan included:

Breakfast: Vegan Chocolate Shakeology w/ banana. red purple

Snack: Carrot sticks and cucumber slices. green

Day 18: 21 Day Bikini Bootcamp

Oh man… Day 18 already?!? I know I’ve said it before, but I really can’t believe that this round is almost over! It seems like just yesterday we started this journey! I’m so proud of my challenge group! I can’t wait to share their round 1 results and see how much they continue to improve over the next 21 days!

I had my leftovers from dinner last night for lunch and it was aaaamazing!! I think I am definitely going to have to recreate this Greek Salmon! It came with kalamata olives, but I ate them all during dinner. So, it’s basically salmon topped with feta cheese, sundried tomatoes, and olives. It tasted so good! I needed something to go with it ,so I sauteed some asparagus in coconut oil, lemon juice, and garlic! Perfection!!

Day 17: 21 Day Bikini Bootcamp

Hump day!!!

Today was my birthday and I knew I’d be indulging this evening to celebrate. So, I kept it super simple and healthy. I even made sure to do my workout before going out! And I did a water challenge. Woohoo!!! It felt so good to stay (mostly) on track!

Today’s meal plan included:

Lunch: Diced rotisserie chicken with steamed broccoli & green beans. red green green
Snack: Navel Orange. purple
Dinner: Greek salmon with french fries, mac & cheese, and a glass of wine. Not too bad! – Not going to bother trying to calculate this, I’m just going to call it a cheat meal. 😉

Day 16: 21 Day Bikini Bootcamp

Day 16! Wow!! There are just 5 short days left in this round! Time really does fly when you’re having fun!

Today’s workout is upper fix again and I think I am ready to increase my weights! This is always an exciting thing!! Sure, it hurts the first couple of times, but nothing feels better than getting stronger!

I have been going back to drinking my Shakeology every single day now that it’s getting warmer. I have a hard time drinking a cold shake when it’s cold outside. And since you’re really not supposed to heat it up, I just use the cold days to save my packets as samples for new customers. But, my goal is to drink it every day for the next 12 months. I know that it has some great benefits, and I have already experienced some, but I want to see for myself what a whole year of Shakeology does!

Day 15: 21 Day Bikini Bootcamp

Happy Monday! I’m so glad it’s Monday! It’s soooo much easier to stay on track during the week!

We’re back to Total Body Cardio. Ugh… it’s a tough one, but we gotta do it! Since this is week 3 of our challenge group, we’ve decided to add 10 minute abs twice a week. 10 minutes doesn’t sound like a long time, but man this one seems like it lasts FOREVER!

There’s been some buzz in my group and it seems like people are seeing some results! So exciting!! I can’t wait to see what the final results look like!!
