Day 17: 21 Day Bikini Bootcamp

Hump day!!!

Today was my birthday and I knew I’d be indulging this evening to celebrate. So, I kept it super simple and healthy. I even made sure to do my workout before going out! And I did a water challenge. Woohoo!!! It felt so good to stay (mostly) on track!

Today’s meal plan included:

Breakfast: Cafe latte Shakeology. red
Lunch: Diced rotisserie chicken with steamed broccoli & green beans. red green green
Snack: Navel Orange. purple
Dinner: Greek salmon with french fries, mac & cheese, and a glass of wine. Not too bad! – Not going to bother trying to calculate this, I’m just going to call it a cheat meal. 😉

Day 16: 21 Day Bikini Bootcamp

Day 16! Wow!! There are just 5 short days left in this round! Time really does fly when you’re having fun!

Today’s workout is upper fix again and I think I am ready to increase my weights! This is always an exciting thing!! Sure, it hurts the first couple of times, but nothing feels better than getting stronger!

I have been going back to drinking my Shakeology every single day now that it’s getting warmer. I have a hard time drinking a cold shake when it’s cold outside. And since you’re really not supposed to heat it up, I just use the cold days to save my packets as samples for new customers. But, my goal is to drink it every day for the next 12 months. I know that it has some great benefits, and I have already experienced some, but I want to see for myself what a whole year of Shakeology does!

Today’s meal plan included:

Breakfast: Vegan chocolate shakeology w/ banana & almond butter. red purple tsp
Lunch: Sweet potato hash w/ scrambled eggs. red yellow green blue
Snack: Baby carrots. green
Dinner: Rotisserie chicken breast w/ green beans and sweet potato. red red yellow green
Dessert: Sliced strawberries w/ honey. purple tsp

Day 15: 21 Day Bikini Bootcamp

Happy Monday! I’m so glad it’s Monday! It’s soooo much easier to stay on track during the week!

We’re back to Total Body Cardio. Ugh… it’s a tough one, but we gotta do it! Since this is week 3 of our challenge group, we’ve decided to add 10 minute abs twice a week. 10 minutes doesn’t sound like a long time, but man this one seems like it lasts FOREVER!

There’s been some buzz in my group and it seems like people are seeing some results! So exciting!! I can’t wait to see what the final results look like!!

Day 12, 13 & 14: 21 Day Bikini Bootcamp

Hey friends!!

I hope you all had a wonderful holiday weekend with your families! I had a nice, productive weekend.

Friday was business as usual! Went to Cracker Barrel for lunch and got breakfast. I tried to keep it as clean as possible. Not too bad! Saturday morning I woke up and got my workout in first thing! It felt really good to have it out of the way so that I could have the rest of the day off! I did a little housekeeping stuff and then took off to go see my husband at the JenningsGP motorcycle track. He is a control rider for a group called Southern Track Days and basically he helps teach newer riders how to ride the track. Jennings is actually where Steve & I met for the very first time, so it’s kinda special to us! 🙂

Sunday was mostly catching up on laundry and cleaning. It was nice and relaxing! I did my yoga and some meal prep too!

This weekend was kind of weird food wise, I stayed on track for the most part. I did have a cheat meal on the way home Saturday. I was starving and stopped at Wendy’s. It was soooo delicious, but I felt gross afterwards. I got back on track Sunday morning though!

Day 11: 21 Day Bikini Bootcamp

We have officially hit the half way mark! Yesssss!!! I’m so excited to get feedback from my challengers saying that their clothes are fitting better and their friends are starting to notice positive changes. Speaking of positive changes, I’ve noticed some changes in my body as well. In addition to getting stronger and being able to hold a plank for the full minute every.single.time., I have noticed my clothes are fitting a little better! WOOHOO!

Today is Pilates day and I need this so much. I’ve really been pushing my body and the active recovery day is very welcome!

Nothing fancy this week for my meals, except I was craving a white pizza. So, I created a 21 day fix version that really hit the spot. It was deeeeelicious!

Day 10: 21 Day Bikini Bootcamp

Happy Hump Day, friends!!

Today is leg day again! Time to do some squats!!! I’ve started doing the “music off” version of my workouts this week and I have to say, I really love it! I created a few playlists depending on which workout I’m doing and I can tell that I push harder. Kinda funny, huh? I’m not a huge fan of rap music, but Lil Jon’s Get Low is super awesome for leg day!

Today was a great food day! I was craving some french toast like nobody’s business. I didn’t want just regular french toast, I wanted it stuffed with creamy deliciousness and strawberries. Cream cheese is usually the go-to for stuffed french toast, but it’s not @1 Day Fix approved, so I opted for ricotta cheese instead. The texture it a little different, but it was very satisfying and delicious! Definitely curbed that craving! Recipe is in the link below!

Stuffed French Toast

I am on a big breakfast for dinner kick lately! I could eat breakfast any time of day. How about you?? Check out this healthy and delicious twist on stuffed french toast!

Stuffed French Toast – 21 Day Fix approved!

Ingredients:

1 egg, beaten
2 Tbsp unsweetened almond milk
1 tsp cinnamon
2 tsp vanilla extract (1 for french toast + 1 for ricotta mixture)
2 slices whole wheat bread
1/2 cup fat free ricotta cheese
2 tsp honey or agave
4 strawberries, sliced
Pure maple syrup
Coconut oil spray

Directions:

  • Mix egg, milk, cinnamon and 1 tsp vanilla.
  • Dip bread into egg, coating both sides.
  • Spray a pan with coconut oil and cook french toast until crisp on both sides.
  • Meanwhile, stir ricotta, vanilla, and honey until mixed well. Set aside.
  • On a plate, layer 1 piece of french toast, strawberries, and ricotta. Top with second piece of french toast and any remaining strawberries. Drizzle with a little maple syrup.
  • Stuff your face!!

Serves 1

Day 9: 21 Day Bikini Bootcamp

Whew! Today was a BUSY day!! I really didn’t feel like getting my workout done, but I pushed play and gave it my all! It’s really important to not let life get in the way when it comes to a new fitness routine. I was dog tired, but I knew if I didn’t do my workout that I would probably allow myself to make other excuses. I am really committed to practicing what I preach and set a positive example for my challengers. And you know what? I felt so good after I finished my workout!! I was able to use my heavy weights the entire time and I found myself able to do more reps. Yesss!!!

It was such a busy day that I didn’t take time to snap pics of any of my food except for dinner. I got one quick shot and then devoured it! Since I didn’t make any excuses today and really pushed myself to stick with my plan, I treated myself to a nice bath with one of my favorite bath bombs!
